PURPOSE: Red pepper paste using pear and apple juice, and a producing method thereof are provided to reduce the aging period of the red pepper paste. CONSTITUTION: A producing method of red pepper paste using pear and apple juice comprises the following steps: adding water to the same amount of pear and apple juice, boiling the mixture for an hour, and adding rice powder into the mixture after saccharifying with malt; roasting red pepper powder and fermented soybean powder; and mixing the pear and apple juice mixture with the roasted red pepper powder and fermented soybean powder, and adding bay salt into the mixture for aging. |
