MEAT PRODUCTS CONTAINING YAM PULPS OR POWDERS AND METHOD THEREOF

PURPOSE: A processed meat product containing yam flesh or powder, and a producing method thereof are provided to prevent the viscosity increase of food when using yam as an ingredient. CONSTITUTION: A processed meat product containing yam flesh or powder comprises the following steps: washing yam, and cutting the washed yam into the thickness of 2-10mm; freezing or drying the cut yam flesh, and pulverizing the frozen or dried yam flesh into the size of 30-300 meshes; sterilizing the obtained yam powder, and assorting metallic materials from the yam; mixing ground meat and additional ingredients with 1-10wt% of frozen yam flesh or 0.1-1.5wt% of yum powder; filling the mixture into a casing, a mold, or a retainer; and heating and cooling the mixture, and packaging the mixture without heating or cooling.
