PURPOSE: A baked confectionery composition, and baked confectioneries using thereof are provided to improve the crunchy texture of the confectioneries. CONSTITUTION: A baked confectionery composition contains a starch material containing alpha starch and beta starch, and one material selected from wheat protein or oil. The starch material contains 3-10wt% of alpha starch and 97-90wt% of beta starch. The baked confectionery composition contains 100 parts of starch material by weight, and less than 40 parts of wheat protein or oil by weight. The alpha starch is selected from the group consisting of waxy corn starch, glutinous rice starch, and acetylation waxy corn starch. Baked confectioneries are obtained by molding and baking dough containing the baked confectionery composition.
