PURPOSE: A producing method of smoked duck containing blueberry is provided to remove the unique bad smell of duck meat, and to improve the taste, the functionality, and the texture of the duck meat. CONSTITUTION: A producing method of smoked duck containing blueberry comprises the following steps: preparing duck meat, and a curing solution containing 60-70wt% of blueberry and purified water(S11, S12); curing the duck meat in the curing solution using a vacuum tumbler for 2-3 hours(S13); and aging the duck meat for 20-30 hours at -2-5 deg C, and smoking the aged duck meat using sawdust of black oak trees(S14, S15). The curing solution additionally contains more than one additive selected from the group consisting of a smoked duck seasoning, charcoal barbecue sauce, sodium erythorbate, a red pigment, and sodium nitrite. |
