摘要 PURPOSE: A producing method for fermented ginseng or red ginseng using an aeration pellet culture method is provided to rapidly obtain fermented ginseng or red ginseng containing ginsenoside metabolites which are biologically active in various ways, including immunity boosting, tumor prevention, and cancer prevention. CONSTITUTION: A producing method for fermented ginseng or red ginseng comprises the following steps: crushing ginseng or red ginseng into a powder(S10); adding distilled water to the ginseng or red ginseng powder to obtain a ginseng or red ginseng suspension, and sterilizing the suspension(S20); shake-culturing Volvariella volvacea mycelia in a glucose yeast medium at 30-35 deg C for 2-5 days while flowing 2-10 vvm of air to obtain pellet mycelia(S30); injecting the pellet mycelia into the ginseng or red ginseng suspension, and culturing the mixture at 30-35 deg C in a pH of 4.5-6.5 for 2-7 days while flowing 2-10 vvm of air(S40); sterilizing the obtained culture fluid of the fermented ginseng or red ginseng at 95 deg C for 30-60 minutes(S50); and condensing the sterilized culture fluid of fermented ginseng or red ginseng(S60).
