<P>PROBLEM TO BE SOLVED: To provide novel flavor raw material which is used for producing "soup stock" and which satisfies homogenization of flavor and rapid production of the "soup stock" as product quality required by consumers of the flavor raw material: and to provide a method for producing the flavor raw material. <P>SOLUTION: The method for producing flavor raw material having a final moisture content of 5-12 wt.% includes: pulverizing raw material produced by a conventional method; bringing the pulverized raw material into contact with aqueous solution followed by drying the raw material to make adjustment of the moisture content of the raw material; and coating the surface of the raw material with extracted flavor raw material concentrate or the like. <P>COPYRIGHT: (C)2012,JPO&INPIT |
