<P>PROBLEM TO BE SOLVED: To provide an oil-and-fat composition which can be used in cooking while being capable of improving properties, such as flavor of a cooked product. <P>SOLUTION: The oil-and-fat composition contains (A) 0.02-1.8 wt.% of a free triterpene alcohol and (B) ≤1.4 wt.% of a fatty acid ester type triterpene alcohol, with the mass ratio of (A)/(B) being more than 1. <P>COPYRIGHT: (C)2012,JPO&INPIT |
