A substantially dry food product portion comprises a sheet comprising a food product and an edible film. The food product portion may be a stock cube, soup, sauce, powdered drinks e.g. coffee or hot chocolate, spices, or non perishable products such as flavourants and colourings. The edible film may comprise a food grade polymer, which may be gellable to form a substantially solid gel when dried to facilitate forming the film. The edible polymer may be pullulan which is a polysaccharide highly impermeable to oxygen and helps to preserve food products which are contained in the film. The food products may be combined with pullulan in a solution, cast into sheets having a desired thickness, and dried. Pullulan may be used to create a substantially solid food product in the form of an edible, dissolvable film which also provides thickening properties for a liquid product in which it is dissolved. |
