<P>PROBLEM TO BE SOLVED: To provide a method for producing a fruit wine of good flavor with its quality deterioration by oxidation inhibited. <P>SOLUTION: The fruit wine of good flavor is produced by contacting an inert gas such as nitrogen gas with bubble sizes made at 0.1-50 μm each with a fruit wine before bottled, especially wine with no antioxidant added thereto; wherein it is preferable that the respective sizes of the bubbles are 0.1-20 μm each, and it is further preferable that the rate of the amount of the inert gas to be contacted is 3-40 mL/min for 1 L for 10-60 min. <P>COPYRIGHT: (C)2012,JPO&INPIT |
