<P>PROBLEM TO BE SOLVED: To provide an emulsifier formulation for molded potato chips, and a method for producing molded potato chips using the emulsifier formulation that can give a characteristic light mouth feel to the molded potato chips. <P>SOLUTION: The emulsifier formulation for molded potato chips is obtained by spraying two or more kinds of melted glycerol fatty acid ester (e.g., reaction monoglyceride and glycerin organic acid ester) under temperature conditions of -196°C to 15°C, and cooling and solidifying the sprayed substance. The method for producing molded potato chips includes adding the emulsifier formulation for molded potato chips to molded potato chips ingredients to prepare dough. <P>COPYRIGHT: (C)2012,JPO&INPIT |
