<P>PROBLEM TO BE SOLVED: To provide a rice-like food product which offer fewer calories, has a texture similar to rice, and additionally, melts as little as possible upon cooking rice, and to provide a production method of the rice-like food product. <P>SOLUTION: The rice-like food product in the form of rice is obtained by reacting a sol solution in which starch and an alginic acid or its salt are dissolved to water with multivalent cation to obtain a gel, and drying the gel. The production method of the rice-like food product includes a solation process for solating the starch and the alginic acid or its salt, a gelation process for gelling the sol, a drying process for drying the gel, and a shaping process for shaping the dried gel into the form of rice. <P>COPYRIGHT: (C)2012,JPO&INPIT |
