<P>PROBLEM TO BE SOLVED: To provide rice flour food dough which hardly dissolves in cooking and which can obtain much body when gelatinized in cooking; and rice flour food using the same. <P>SOLUTION: The rice flour food dough containing rice flour as a main ingredient is characterized by a front surface layer of the dough which is made into resistant starch. It is preferable that the front surface layer is made into the resistant starch by wet-heat treating the dough after molding the dough. In this case, it is preferable that the raw material dough in the molded state whose water content is 30-130% and whose gelatinization degree is not more than 70% is treated with moisture and heat within a sealed space at 105-140°C for 5-240 minutes, or that heated steam is applied to the surface of the dough. <P>COPYRIGHT: (C)2012,JPO&INPIT |
