PURPOSE: Hot sauce using red pepper seeds, and a producing method thereof are provided to improve the palatability of the hot sauce by containing components of the red pepper seeds. CONSTITUTION: A producing method of hot sauce using red pepper seeds comprises the following steps: mixing a base including red pepper seed oil and lemon vinegar, a thickening agent, tomato ketchup, and a first seasoning ingredient, and heating the mixture at 85-95 deg C for 10 minutes to obtain first paste(S10); mixing the red pepper seed oil, red pepper seed powder, fat, and a second seasoning ingredient, and heating the mixture at 130-180 deg C for 4-6 minutes to obtain second paste; and mixing the first paste and the second paste in a ratio of 3:1, and heating the mixture at 85-95 deg C for 5 minutes. The first seasoning ingredient is formed with high fructose, salt, or red wine. The second seasoning ingredient is minced garlic. |
