<p>The method involves establishing a balance between a wine (32) and a gas phase i.e. air phase (36), in a hermetic container (30). The gas phase is injected into the wine until establishing the balance between the wine and the air phase. Fraction of the gas phase is extracted from air. The gas phase is analyzed to evaluate characteristics of the gas phase corresponding to wine characteristics evaluated in a redox state to determine a characteristics value of the wine. An independent claim is also included for a strong wine characteristics evaluating device comprising a measurement unit.</p> |
