FIELD: process engineering. ^ SUBSTANCE: invention relates to food industry and may be used for mincing and sterilising vegetable stock. Proposed mincer comprises loading bin with inlet and outlet, lock gate arranged in outlet, gate feeder arranged in said inlet. Besides, it incorporates steam generator, throttle valve, three-way valve and ejector. Steam generator is communicated with three-valve inlet with its outlets communicated with ejector inlet chamber and throttle valve, respectively. Ejector low-pressure chamber and throttle valve are communicated with bin. Ejector outlet chamber communicates with atmosphere. Gate feeder is made up of shut-off device. Throttle valve represents adjustable design. Mincer is equipped with control unit with power supply. Three-way valve, shut-off device and adjustable throttle vale are provided with drives connected to control unit connected with temperature pickup arranged in the case. ^ EFFECT: higher efficiency and quality. ^ 3 cl, 1 dwg |
