<P>PROBLEM TO BE SOLVED: To provide a coffee drink holding the flavor feeling of natural coffee in extraction of the coffee even under the heat sterilization treatment after the extraction of the coffee, and under the distribution and reservation after the treatment. <P>SOLUTION: The coffee drink holding the flavor feeling of the natural coffee in extraction is produced by adding (i) one or more compounds selected from the group consisting of the following groups A and B, or (ii) compounds obtained by adding one or more compounds of the following group C to one or more compounds selected from the group consisting of the groups A and B, to a coffee extract in the production of the coffee drink: group A: methyl 3-(furfurylthio)propionate, 2,4-dithiapentane and 2-methyl-1,3-dithiorane; group B: ethyl acetate, propyl acetate and benzyl acetate; and group C: 2-pentanethiol and 5-methylquinoxaline. <P>COPYRIGHT: (C)2012,JPO&INPIT |
