<P>PROBLEM TO BE SOLVED: To provide a highly flavored fermented alcoholic beverage using hop extracts such as supercritical carbon dioxide-extraction hops, to which harmonized bitterness is added with both high-quality bitterness and sense of body. <P>SOLUTION: Hop extraction residues (spent hops) using supercritical carbon dioxide are combined and added to hop extracts such as supercritical carbon dioxide-extraction hops in producing fermented alcoholic beverages such as beer, sparkling liquor and other kinds of alcoholic beverages. In the production, an S-fraction ratio, a ratio of S-fraction, defined as the total sum of area of all the peaks detected before a peak of iso-α acid in HPLC, to the sum of S-fraction and iso-α acid is adjusted to 0.28-0.37. According to the method for production, the highly flavored fermented alcoholic beverage to which a harmonized bitterness with both mild and high-quality bitterness and sense of body is produced. <P>COPYRIGHT: (C)2012,JPO&INPIT |
