<P>PROBLEM TO BE SOLVED: To provide a method for producing equols by using a single strain, capable of further increasing the amount of added isoflavones than ever before in a medium, capable of greatly increasing the amount of production of equols, capable of easily recovering the produced equols, and capable of further greatly increasing gains of equols than ever before. <P>SOLUTION: β-cyclodextrin or β-cyclodextrin derivative or γ-cyclodextrin is added to the medium containing isoflavones, and a kind of obligately anaerobic microorganism having the equol-producing ability is made to affect the medium. <P>COPYRIGHT: (C)2012,JPO&INPIT |
