<P>PROBLEM TO BE SOLVED: To provide a liquid nutritious composition which has refreshness brought by acidity, slightly-viscous and pleasantly-tasty refreshness, refreshing appearance due to transparency, and both of heat resistance and emulsification stability while containing nutrient components such as protein, sugar and oil and fat with good balance. <P>SOLUTION: The liquid nutritious composition includes protein, sugar, an emulsifying agent, oil and fat and water, and has pH 3.0-5.0. In the liquid nutritious composition, the protein (A) is collagen peptide and vegetable peptide having a weight-average molecular weight of 1,000-5,000, the sugar (B) is sugar having a number-average molecular weight of 300-900, the emulsifying agent (C) is a polyglycerine fatty acid ester being an ester comprising polyglycerine having an average degree of polymerization of not less than 5 and either of an oleic acid or a myristic acid, the oil and fat (D) is MCT, the blending quantity of the protein (A) is 2-11 mass%, the blending quantity of the sugar (B) is 1-35 mass%, and the total blending quantity of the emulsifying agent (C) and the oil and fat (D) is 1-13 mass%. <P>COPYRIGHT: (C)2012,JPO&INPIT |
