<P>PROBLEM TO BE SOLVED: To provide a culture method (capable of efficiently producing kefiran) capable of accumulating kefiran in a high concentration in a medium. <P>SOLUTION: In the method for producing a saccharide by culturign lactic acid bacteria, at a point of time when 10-50 mass% of a carbon source in a medium at the start of the culture is consumed, the culture temperature drops and then the lactic acid bacteria are further cultured.
