<P>PROBLEM TO BE SOLVED: To provide a new strain of Sparassia crispa containing more β-glucan than conventional Sparassia crispa and efficiently producible in a short term industrially, in high quality and at low cost in relevant facilities, and to provide a method for identifying a specific strain thereof at carpophore and mycelia levels. <P>SOLUTION: The new Sparassia crispa contains ≥48.0 g of β-glucan per 100 g carpophore on a dry basis, preferably being Sparassia crispa UT-18(FERM P-19768), Sparassia crispa UT-21(FERM P-19769), Sparassia crispa UT-31(FERM P-19770) and Sparassia crispa UT-33(FERM P-19771).
