The invention comprises esters of acetoin with aliphatic carboxylic acids containing 6 to 18 carbon atoms, and a process for their preparation comprising reacting at 50 to 200 DEG C. 3-chlorobutanone-(2) with the appropriate carboxylic acid in the presence of an alkali, or with an alkali metal salt of the carboxylic acid. Esters of acetoin exemplified are the caprylate, laurate, myristate, palmitate, undecylenate, oleate, adipate, pimelate, suberate, azelate and sebacate. |
