PURPOSE: A producing method of fermented soybean paste by reducing the aging time is provided to decompose specific protein with far infrared rays for rapidly ferment soybeans. CONSTITUTION: A producing method of fermented soybean paste uses far-infrared functional water as processing water. Soybeans for producing the fermented soybean paste is fermented and aged by using a far-infrared radiation and aging device(200). The far-infrared radiation and aging device includes a far-infrared ray generation/supplying chamber(160) and an aging chamber(180). The producing method of fermented soybean paste comprises the following steps: heating a far infrared radiation material, and inserting into the aging chamber with the soybeans; and fermenting and aging the soybeans at 80-99 deg C. The far infrared radiation material is selected from yellow soil, zeolite, illite, terra alba, diatomite, germanium, or tourmaline.
