<P>PROBLEM TO BE SOLVED: To provide a gel-type processed foodstuff, i.e., a gelled material made from agar as a raw material, which foodstuff maintains its original shape subsequent to heat sterilization and is made palatable as hot food by cooking. <P>SOLUTION: The gel-type processed foodstuff is produced by mixing and heating alginic acid, agar and water of a normal temperature, or mixing alginic acid, agar and preheated hot water of not lower than 50°C to produce a viscous sol, subsequently cooling the sol to solidify the agar contained in the gel to produce a thermoreversible sol, and thereafter causing the thermoreversible gel to contact a metal ion to solidify the alginic acid contained in the thermoreversible gel. <P>COPYRIGHT: (C)2012,JPO&INPIT |
