摘要 <P>PROBLEM TO BE SOLVED: To produce sponge cake with fine-textured dough and with moist texture by an all-in mix method using foaming emulsified oil and fat; and to reduce the cost of producing the sponge cake by reducing the mixing amount of egg used in raw materials. <P>SOLUTION: This invention provides: a method for producing sponge cake by an all-in mix method of mixing raw materials containing egg, 1-15 pts.mass of whole fat soybean flour relative to 100 pts.mass of the egg, cereal flour other than whole fat soybean flour and foaming emulsified oil and fat; a method for producing sponge cake using a whole fat soybean flour-containing composition containing 50-90 pts.mass of whole fat soybean flour, soybean protein, oligosaccharide, an emulsifier, and starch and/or dextrin; and a method for producing sponge cake by an all-in mix method of mixing raw materials containing egg, 1-15 pts.mass of a whole fat soybean flour-containing composition relative to 100 pts.mass of the egg, cereal flour other than whole fat soybean flour and foaming emulsified oil and fat. <P>COPYRIGHT: (C)2012,JPO&INPIT
