In the present invention, there is disclosed a method for preventing formation of chlorinated derivatives, especially acyl derivatives of 3-monochloropropane-1,2-diol (3-MCPD), 2-monochloropropane-1,3-diol (2-MCPD), 2,3-dichloropropan-1-ole (2,3-DCP), 1,3-dichloropropan-2-ole (1,3-DCP) a glycidyl esters being formed during high-temperature treatment processes within temperature range of 80 to 320 degC, especially in the deodorizing process of vegetable oils and animal fats containing chlorides, wherein the method is characterized in that, 0.1 to 100 moles of a base, being selected from the group consisting of lithium, sodium, potassium, magnesium, calcium or hydride, oxide, hydroxide, alkoxide, carbonate, hydrogencarbonate, lithium or sodium or potassium or magnesium or calcium alkanoate or a mixture thereof are added to 1 mole of a contained free fatty acid. |
