PURPOSE: Sweet potato gruel and a producing method thereof are provided to offer abundant amount of anthocyanin contained in sweet potato to eaters. CONSTITUTION: A producing method of sweet potato gruel comprises the following steps: assorting sweet potatoes, and removing foreign materials from the surface of the sweet potatoes by washing; removing decomposed portions from the sweet potatoes, and cutting the sweet potatoes into the thickness of the finger; drying the cut sweet potatoes, and mixing 300g of cut sweet potatoes with water; adding 220g of kidney beans and 14g of sodium bicarbonate into the water, and boiling the water before heating the water in the medium heat for 40 minutes; and adding 300g of glutinous millet into the mixture, and adding 300g of sugar into the mixture before stirring the mixture in the medium heat.
