<P>PROBLEM TO BE SOLVED: To provide an acidic oil-in-water emulsified food suppressed in peeling off from food after applying to food and baking, and oil separation during preservation, in the acidic oil-in-water emulsified food, and to provide a method for producing the acidic oil-in-water emulsified food. <P>SOLUTION: This acidic oil-in-water emulsified food comprises a thickening stabilizer having heat solubility, and gelatin.
