PURPOSE: A method for making Makkoli containing Nelumbo nucifera roots and leaves is provided to contain rich flavor and functionality of Nelumbo nucifera. CONSTITUTION: A method for making Makkoli containing Nelumbo nucifera comprises: a step of adding nuruk, yeast, and water to hard-boiled rice and fermenting to prepare a first deotsul(raw materials for brewage); a step of adding wheat flour paste, hard-boiled rice, and purified enzyme to the first deotsul to prepare second deotsul; a step of lotus root paste and lotus leaves and fermenting to prepare third deotsul; and a step of adding glutinous rice paste to the third deotsul and fermenting. |
