<P>PROBLEM TO BE SOLVED: To provide a method for softening a boiled scallop mantle lobe to be discarded to be utilized as a food material. <P>SOLUTION: A food material 7 whose physical properties are changed is obtained by subjecting a heated bivalve mantle lobe 1 to a boiling process P1 for boiling the mantlelobe 1 in an alkaline solution 2. The method for producing the food material 7 may include an enzyme treatment process P2 for degrading a treated substance 3 with enzymes 4 after the boiling process P1.
