<P>PROBLEM TO BE SOLVED: To provide a method for producing a highly soluble calcium hydroxide solution that has a high solubility in water and is soluble in water even at a low temperature, and can be used for calcium-fortified foods and for improving the keeping quality of foods. <P>SOLUTION: The method for producing a highly soluble calcium hydroxide solution includes adding burned calcium as a raw material to a heated honeydew until the saturated state is reached.
