摘要 PURPOSE: Seasoned red pepper sauce for stews, and a preparation method thereof are provided to use red pepper seeds thrown away during a process for preparing red pepper powder. CONSTITUTION: A preparation method of seasoned red pepper sauce for stews comprises the following steps: crushing 10-27wt% of red pepper with seeds, and 8-10wt% of Cheongyang chili pepper; mixing the crushed pepper with 5-6wt% of red pepper powder, 10-13wt% of garlic, 9-10wt% of ginger, 10-11wt% of salt, 10-11wt% of maltodextrine, 2-3wt% of sugar, 1-2wt% of shrimp, 2-3wt% of salted skipjack, 4-5wt% of kimchi sauce, 1-2wt% of artificial seasoning, 10-11wt% of starch syrup, and 1-3wt% of red pepper seed powder; heating the mixture t 854-86 deg. C., and maintaining the temperature for 14-16 minutes before packaging; and freeze-drying the obtained sauce to obtain blocks before packaging withaluminum foil.
