PURPOSE: A producing method of a fermented quince undiluted solution, and a quince drink composition using the fermented quince undiluted solution are provided to offer the improve taste and flavor of fermented quince to eaters. CONSTITUTION: A producing method of a fermented quince undiluted solution comprises the following steps: mixing 5-25wt% of quince juice, 10-30wt% of high fructose corn syrup, 5-15wt% of malto-oligosaccharide, and the balance of water to obtain a first mixture having the sweetness of 20-30 Brix; mixing 100 parts of first mixture by weight and 0.001-0.02 parts of vegetable lactobacillus by weight to obtain a second mixture; and fermenting the second mixture for 2-5 days at 30-40 deg C, and filtering and concentrating the fermented mixture. The pH of the first mixture is 4-6. The first mixture is sterilized at 100-110 deg C for 1-30 minutes before cooling at 30-40 deg C. |
