摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing frozen Japanese radish for making flavor and palate feeling after cooking appropriate through processing in accordance with use as a food material, and to provide the frozen Japanese radish. <P>SOLUTION: The method for producing the frozen Japanese radish includes a heating step (S3) of heating Japanese radish, a cooling step (step S4) of cooling the Japanese radish after the heating step, and a freezing step (step S5) of freezing the Japanese radish after the cooling step. The Japanese radish just before frozen is adjusted in hardness so as to previously supplement cooking content to be applied to the Japanese radish after thawed, by heating at heating temperature and heating time in accordance with use as a food material.
