<P>PROBLEM TO BE SOLVED: To provide bread in which though it is white baking, a very thin layer of a surface is hard, and an inside is soft. <P>SOLUTION: A method of manufacturing white baking bread with a surface of unique structure comprises as follows. A rate of reducing sugar over all wheat flours in the composition is at most 10 wt.%, further, bake time takes at least 6 minutes and at most 20 minutes, and mold baking is carrying out. <P>COPYRIGHT: (C)2012,JPO&INPIT |
