PURPOSE: A producing method of jelly using seafood is provided to maintain the unique texture of the jelly, and to offer the unique taste, flavor, and color of the seafood to the jelly. CONSTITUTION: A producing method of jelly using seafood comprises the following steps: crushing dried seafood containing 20-50 mass% of moisture(S120); mixing 100 parts of crushed seafood by weight, 50-200 parts of rice powder by weight, and 10-80 parts of water(S130); steaming the mixture, and aging the steamed mixture at room temperature for 10-15 minutes(S140, S150); firstly molding the aged mixture into a rod shape, and cooling the first molded product using 10-20 deg C water(S160, S170); and molding the first molded product into a shape similar to seafood materials(S180).
