摘要 A method for marinating meat comprises cutting meat into pieces, adding salt, chopped or cut onion, a 3 % solution of acetic acid in an amount of 2 % to the weight of the meat and keeping the mixture for marinating at 2-4 °C. Cut pieces of the meat are preliminary kept in electrically activated water with pH 3.6-4.6 at a ratio of components of 1:3…1:5 in the course of 2.5-3.5 hours, and the amount of acetic acid and salt at further mixing of the ingredients is reduced in by 10 times.
