<P>PROBLEM TO BE SOLVED: To provide a method which easily and effectively purifies a green tea extract in a simple process and produces a purified green tea extract, improved in bitterness and an off-taste of an aftertaste derived from a non-polymer catechins even when the concetration of the non-polymer catechins in a solid content is high. <P>SOLUTION: The method for producing the purified green tea extract includes making the green tea extract having concentration of 20-50 mass% of the non-polymer catechins in a solid content into an aqueous solution, and passing the green tea extract aqueous solution through a filtration membrane having less than 3,000 molecular weight cut-off. <P>COPYRIGHT: (C)2012,JPO&INPIT |
