<P>PROBLEM TO BE SOLVED: To provide a sealing device and a sealing method, allowing sealing work to be easily performed. <P>SOLUTION: The sealing device 100 is provided for sealing the ends of a plurality of through-holes 70a in a honeycomb structural body 70 with a sealing material over a prescribed sealing length L. The device 100 includes: a recess forming part 99 for forming a depth-adjustable recess 20d; a retaining part 80 for keeping the end surface of the honeycomb structural body 70 having the plurality of through-holes 70a on top of the depth-adjustable recess 20d; and a depth adjustment part 50 for changing the depth of the depth-adjustable recess 20d.
