摘要 <P>PROBLEM TO BE SOLVED: To provide a method for easily producing 100% rice flour bread from familiar and safely edible materials, and a method for producing sufficiently leavened 100% rice flour bread with excellent taste and texture. <P>SOLUTION: This invention provides the method for producing 100% rice flour bread with greatly improved leavening by the prefermentation of rice flour using malted rice with rich experience in meal.
