摘要 PURPOSE: A producing method of a fermented citron solution, and a citron drink composition using the fermented citron solution are provided to improve the taste and the flavor of the fermented citron solution. CONSTITUTION: A producing method of a fermented citron solution comprises the following steps: mixing 20-40wt% of citron juice, 10-30wt% of liquid fructose, 5-15wt% of malto-oligosaccharide, and the balance of water to obtain a first mixture having the sweetness of 25-30Brix; mixing 0.1-10 parts of edible alkali compound by weight with 100 parts of first mixture by weight to obtain a second mixture having the pH of 4-5, and sterilizing the second mixture at 100-110 deg C for 10-30 minutes; mixing 0.01-0.2 parts of vegetable lactobacillus by weight with 100 parts of second mixture to obtain a third mixture; and fermenting, filtering, and concentrating the third mixture to obtain the fermented citron solution comprises. The edible alkali compound includes one material selected from sodium hydrogen carbonate, calcium carbonate, or their compound.
