PURPOSE: Palbo kimchi and a producing method thereof are provided to mix sated Chinese cabbage or radish with pre-fermented aged kimchi seasonings. CONSTITUTION: A producing method of palbo kimchi comprises the following steps: salting Chinese cabbage or radish; mixing kimchi seasonings, and aging the seasonings for 25~30hours at 36~40deg C; and mixing the salted Chinese cabbage or radish with the aged kimchi seasonings. The kimchi seasonings include red pepper powder, garlic, perilla seed powder, fermented mackerel, sweet potato starch glue, curcumae longae rhizoma, pollen, and tomato paste.
