<P>PROBLEM TO BE SOLVED: To provide a drying apparatus that can shorten a drying time, does not cause the decomposition and discoloring of fish or the like, can also shorten a boiling time at low cost, and can produce delicious dry food. <P>SOLUTION: This drying apparatus includes: a steamer basket drying chamber 2b in which food to be dried such as small fish is accommodated and a plurality of steamer baskets 6 are aligned, and which dries the food to be dried by making moist air which is low in relative moisture and high in temperature flow into each steamer basket 6; a mixing chamber 2a which mixes part of the circulated moist air with outside air by replacing them; a heat exchanger 5 which heats the moist air; a fan 3; a circulation passage 4; and an exhaust air valve 10 which exhausts part of the circulating air when its moisture becomes high. The drying apparatus is most characterized in that; in the mixing chamber 2a, the moist air is adjusted to a temperature of 70°C to 90°C and the relative moisture is adjusted to 15% to 30%; and in the steamer basket drying chamber 2b, the circulated moist air is branched at an equal amount per steamer basket by the alignment of the steamer baskets 6 and decelerated in speed in each steamer basket 6. <P>COPYRIGHT: (C)2012,JPO&INPIT |
