<P>PROBLEM TO BE SOLVED: To provide a fat and oil composition for coating capable of efficiently manufacturing food product with an excellent quality, not being blurred in white nor taking on a dull color tone. <P>SOLUTION: A method for manufacturing a puff-like snack food is characterized by coating the fat and oil composition for coating prepared by blending puff dough swelled by an extruder with 0.1-20 pts.wt. of extremely hardened oil of a high erucic acid rape seed oil per 100 pts.wt. of at least one liquid oil with a solid fat index of 5 or less at 10°C selected from rape seed oil, soybean oil, sunflower oil, cotton seed oil, corn oil, safflower oil, rice oil, peanut oil, walnut oil, sesame oil, and olive oil. <P>COPYRIGHT: (C)2012,JPO&INPIT |
