<P>PROBLEM TO BE SOLVED: To provide a roll-in oil and fat composition having wide temperature admissibility (having stiffness and extensibility, which are necessary for roll-in oil and fat, in a wide temperature range without becoming extremely hard or soft). <P>SOLUTION: Interesterified oil and fat is obtained by interesterifying at random an oil and fat mixture which has 9-15 mass% ratio of lauric acid residue, 31-37 mass% ratio of palmitic acid residue, 2.5-5.5 mass% ratio of behenic acid residue, and 53-67 mass% ratio of saturated fatty acid residue, in total fatty acid residue constituting total triglyceride in the oil and fat mixture. <P>COPYRIGHT: (C)2012,JPO&INPIT |
