PURPOSE: A powder composition for producing ice cream containing a bubble collector, and a producing method of the ice cream using thereof are provided to enable users to easily perform the overrun without using an ice cream making machine, and to improve the texture of the ice cream. CONSTITUTION: A powder composition for producing ice cream contains 15-70wt% of sugar, 10-50wt% of dextrin, 12-20wt% of bubble collector, 1-15wt% of powdered dairy product, 0.01-5wt% of sodium casein, and 0.01-5wt% of flavoring agent. The powder composition additionally contains 1-15wt% of powdered fat. The bubble collector is a saccharide mixture containing water-dispersible saccharide and vegetable fat, or water-dispersible saccharide and animal fat. The saccharide is selected from monosaccharide, oligosaccharide, sugar alcohol, dextrin, or carrageenan. The vegetable fat is selected from palm oil, rape seed oil, coconut oil, soybean oil, sunflower seed oil, brown rice oil, rice bran oil, olive oil, hydrogenated oil of fat, or transesterified oil of the fat. The animal oil is selected from beef oil, pork oil, lamb oil, or fish oil. |
