A machine for producing a puffed cereal product from water-moistened cereal meal, such as maize or rice meal, comprises a body 10, Fig. 2, provided with a chamber 32, e.g. in a stator 16, leading into a single extrusion passage 60 through an extrusion head 18, a passage 62 through which the moistened meal is fed into the chamber 32, e.g. from a hopper 12, and a rotatable screw or auger 30 for forcing the meal through the chamber 32 and the extrusion passage 60, at a pressure high enough to heat the meal, vaporize its moisture and gelatinize starch therein, thus baking the meal. The extruded meal becomes puffed and solidified as it emerges from the passage 60, and it is then cut, e.g. into fingers or collets, by a knife 64.
