PURPOSE: A coffee extraction device is provided to increase the capacity of hot water by preheating cold water supplied from the outside using a preheating unit and re-supplying the preheated water to a hot water supply unit. CONSTITUTION: A coffee extraction device comprises a hot water supply unit, a preheating unit(50), and a length-variable fixing unit(60). Cold water is supplied to the hot water supply unit through a water supply line. The hot water supply unit heats the supplied cold water. The preheating unit is detachably installed on the hot water supply unit and discharges the supplied cold water to the water supply line. The length-variable fixing unit is formed on the hot water supply unit and seals a gap between the hot water supply unit and the preheating unit.
