摘要 PURPOSE: A method of producing bean curd-based red pepper sauce is provided to serve the bean curd-based red pepper sauce with chicken for improving the taste and the nutrition value of the chicken. CONSTITUTION: A method of producing bean curd-based red pepper sauce comprises the following steps: mincing garlic, ginger, and spring onions to obtain a mixture(S10); crushing bean curd after removing moisture, and roasting the bean curd with the mixture(S20); and adding red pepper powder into the roasted mixture(S30). The mixing ratio of the roasted mixture and the red pepper powder is based on the preferred color and the concentration of the sauce.
