<P>PROBLEM TO BE SOLVED: To provide a method of producing roasted starch, whereby the viscosity of roasted starch after roasting is 50% or less of the viscosity of raw material starch because of high-temperature roasting. <P>SOLUTION: Starch powders without chemicals, enzymes and water added are roasted at high temperatures of 130 to 220°C to produce roasted starch whose Brabender viscosity after roasting is 50% or less of the Brabender viscosity of raw material starch and whose water content in wt.% is 20% or less. <P>COPYRIGHT: (C)2012,JPO&INPIT |
